Not So Mellow Yellow...

What I absolutely love about this recipe is the flakiness of the crust and the touch of salt to give it a little extra kick... Doubled the recipe... they're still gone in a day! ENJOY & HAPYY BAKING!

LEMON BAR Recipe
Makes 1 9x13" pan (cut into bars)

Crust/
1 1/2 cups whole wheat flour
2/3 cup confectioners’ sugar
1/4 cup cornstarch
1 teaspoon salt
1 1/2 sticks earth balance, cut into cubes

Filling/
6 eggs
3 cups granulated sugar
2 tablespoons lemon zest
1 cup freshly squeezed lemon juice
1 cup whole wheat flour
Confectioners' sugar, for decorating

Directions
Crust/
Preheat your oven to 350F. Spray a 13x9" pan with Pam and line with either foil or wax paper to make it easy for removal later on. Then spray again with Pam.

In a food processor, pulse flour, confectioners’ sugar, cornstarch, and salt. Add butter 1 cube at a time and process to blend, then pulse until mixture resembles coarse meal. Dump crust out onto your prepared pan and press firmly to even out. Refrigerate for 20 minutes, then bake until golden brown, 20 minutes.

Filling/
Whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 35-40 minutes, or until the filling is set. Let cool completely. Store in refrigerator up to 1 week (if they last that long)

Cut into desired shape and decorate with confectioners’ sugar

Exclusive Dairy Free Toffee Bars!

Salty Sweet Toffee Crunch Bars
1 pack of saltines
1 cup earth balance (or butter, if you swing that way)
1 cup packed brown sugar
2 1/2 cups chocolate chips
1 cup chopped almonds (or any kind of nut to your liking)

Directions:
Preheat oven to 350F and spray cookie sheet with PAM baking spray. Line the sheet pan with the crackers close together.
In a medium sauce pan melt the earth balance and brown sugar over medium-high heat. Stir often. Heat the mixture for about 5 minutes until it browns.Pour the buttery mixture over the crackers until they are completely covered. Bake for 15 minutes.

Remove from oven and immediately sprinkle chocolate chips over the saltines. Once the chocolate begins to melt, spread the chocolate evenly with an offset spatula and top with the nuts. Allow to completely cool. Break it apart into manageable pieces and ENJOY!!

D.I.Y. GRANOLA BARS

NO-BAKE Healthy Granola Bars

Ingredients:
PAM SPRAY
1 1/4 cups rolled oats
1 1/4 cups toasted walnuts,
chopped
1/2 cup oat bran
1 1/2 cups cereal of your choice (preferably unsweetened)
1 cup dried cranberries, coarsely chopped
1/4 cup tablespoons dried fruit of your choice, finely chopped (I use dried ginger)
1 cup maple syrup
1/4 cup natural cane sugar
1 teaspoon pure vanilla extract
1/2 teaspoon salt

1 cup raisins

/Chocolate, Melted (optional)

Directions:
Preheat the oven to 350F. Mix the oats, walnuts, oat bran, cereal, cranberries, and any other dry ingredients together in a large bowl pour mixture out onto 2 cookie sheets and toast in the preheated oven until golden brown (about 20 minutes-check often) While the nuts and oats are in the oven spray a 8 by 8-inch pan with PAM for thick bars (use a larger pan if you like them thinner. Combine the syrup, sugar, vanilla and salt in a saucepan over medium heat until dissolved (about 4 minutes). Remove oat mixture from the oven once golden and pour back into the original bowl. Mix in the wet ingredients into the oat mixture while still hot and add any dried fruit that you decided to use. Spread into pan and let cool. Cut into desired shapes and dip bottom half in melted chocolate (optional) CUT, EAT, ENJOY!



No baking necessary! :D
