Would You Like Hummus with That?

This blog post is dedicated to my best friend Yael who is making us all proud at Medical School in Israel. So I ask you... what better sums up the culinary experience in Israel other than shawarma, falafel, hummus and kebabs?! And who ever said you can have have a CAKE KEBAB... and eat it too?? A little buttercream hummus never hurt anyone! But don't worry... It's just chocolate cake, strawberries (as tomatoes of course) and some good ole'fashioned vanilla buttercream to "SHMEAR"! Betay'avon!


A shmear of this, a shmear of that... and of course you can't forget a little shprinkling of "zataar" :D


Making it look like tough meat... What a trooper!

Helping Fight Hunger!

Our good friend val and her company (NYCCAH) The New York Coalition Against Hunger, threw a "Spring into Swing" event to raise money and awareness for the charity. The evning consisted of speeches by some well knew NYC names, cocktails, hors d'oeuvres and of course a silent auction. SHORTBREAD NYC donated a gift basket full of delicious and healthy baked goods and Jonathan donated a gourmet sit down dinner for 6. All the raised money from the auction went to NYCCAH. It was a really great night, great music and always great people out to support a cause!

Dairy Free Madeleines

I guess it is because the similarity of names but every time I make or think of these cookies/cakes, I think of the cartoon of the little french girl... Regardless these are delicious! I used the technique of a recipe from Epicurious but revamped the whole thing so us lacto-folks can indulge as well! The key here really is the brown butter! I have made Martha's Chocolate Browned Butter Madeleines as well and WOWZA!! If you aren't allergic to anything you should stop what you're doing right now and make those! Or you can just order them from SHORTBREAD NYC!

Dairy Free Madeleines
Makes 20

Ingredients/
2 large eggs
2/3 cup sugar (or cane juice crystals)
1 teaspoon vanilla
1 teaspoon lemon zest
1/2 teaspoon salt
1 cup all purpose flour (I used whole wheat- I'm healthy like that :D)
1 1/4 sticks Earth Balance (10 tablespoons)

Directions/
Heat Earth Balance in a small sauce pan over medium-high heat until it begins to brown. Swirl the pan every so often so as not to burn the butter. One golden brown, pour into a small bowl and set aside.
Preheat the oven to 375˚F. Generously coat the pan in remaining Earth Balance or load up on the pam spray. 
Using an electric mixer, beat eggs and sugar in large bowl just to blend. Beat in vanilla, zest and salt. Add flour and beat until just blended. Gradually add the cooled "browned butter" beating until just blended.
Spoon 1 tablespoon of the batter into each mold. Bake until puffed up and golden brown (about 1-15 minutes). Cool in the pan for about 5 minutes then gently remove. Serve and enjoy. 

NOTE/ They only last for a few day before they get harder but I'm sure than wont be a problem... they disappear pretty fast!

As Seen In Bon Appétit Magazine!

I can now finally tell everyone that our cupcakes will be featured regionally as a promotion in Bon Appétit Magazine!! What a dream! But I do Have to say that these cupcakes were the most fun to make... EVER!! Maybe because it bridges the gap between my baking and design world! Almost reminded me of playing with play-dough as a kid... I used to eat it then too, maybe thats why i'm such a spaz! Needless to say... Bon Appétit!! Cool part about all of this isn't just creating the physical cupcakes but when we got to go in and witness the photo shoot. Jon even styled the photo that ended up being printed!
