Market Recipe/ Vegan Ginger and Meyer Lemon Scones

Recipe/ Vegan Ginger and Meyer Lemon Scones
Dietary Consideration/ Vegan, Dairy Free, Low Fat, Low Calorie (and tasty!)

Who doesn't love a scone? Fresh out of the oven that is... smothered in clotted cream and jam... perfected paired with a piping hot earl gray?? No? Just me? Walking through the market yesterday I stumbled upon a basket of "US prized" Meyer lemons... only they were mini. Since I had never seen them before, naturally I had to buy them! Me, my newly acquired Meyer lemons and a tub of crystallized ginger are headed home to whip up some tasty treats! Today scones... who knows what tomorrow might bring?? What is the difference between a Meyer Lemon and a Regular Lemon?
The Meyer lemon fruit is yellow and rounder than a regular lemon. The skin is fragrant and thin, colored a deep yellow with a slight orange tint when ripe. Meyer lemon fruits have a sweeter, less acidic flavor than the more common store bought lemon varieties. Because they are much sweeter you can use much less sugar than you generally would with other lemon flavored desserts.

Vegan Ginger and Meyer Lemon Scones
Makes 16 Small Scones

Ingredients/
2 1/4 cups whole wheat flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 tablespoon finely chopped lemon zest (about 1 lemon)
1 teaspoon salt
1 1/2 sticks earth balance
1/2 cup  candied ginger, finely chopped into 1/4-inch pieces
3/4 cup soy milk, plus extra for brushing the tops of the scones

Directions/
Adjust the oven rack to the middle position and preheat the oven to 400˚F.

In the bowl of a food processor fitted with the steel blade or in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, sugar, salt and baking powder, and pulse or mix on low to incorporate. Add the lemon zest and butter, and pulse on and off, or mix on low, until the mixture is pale yellow and the consistency of fine meal. Transfer the mixture to a large bowl and stir in the ginger. Make a well in the center and pour in the soy milk. Using one hand, draw in the dry ingredients, mixing until just combined.

Wash and dry your hands and dust them with flour. Turn the dough out onto a lightly floured work surface and gently knead a few times to gather it into a ball. Roll or pat the dough into a large rectangle. Cut in half lengthwise then criss-cross up along each thin rectangle (see pictures above) Brush the tops with the remaining soy milk and sprinkle with raw sugar. Bake for 12 to 16 minutes, until the surface cracks and they are slightly browned.

MILK STREET MEETS WALL STREET

Tomorrow morning (Thursday June 23rd) Milk Street Cafe, (a beloved Boston restaurant) opens on Wall street in a 23,000 sqft space as a delicious new addition to the financial district. Not only do I think their food is fantastic but I think their design is GREAT as well (ps... I'm the designer :D) Stop by tomorrow morning for some delicious treats, prizes and a first look at a New York City food hall! From Sushi to a Grill, 2 salad bars and unique breakfast sandwiches, they have it all! - not to mention the fact that they are super health conscious and very accommodating to allergies! Chocolate Cake & Lasting Friendships

A few years ago while on a trip to Poland I was sitting quietly when I noticed a girl about my age sitting next to me... We got to talking and realized that among several common interests, we were both graphic designers and attended similar art schools in our respective home states. 8 years later and we have managed to stay such great friends despite our long distance. What does this have to do with chocolate cake you ask?? Well this dear friend of mine came to Boston a few weeks ago for a photo shoot and of course we couldn't resist creating one of our own. After our grand driving tour of Boston we cozied up to my parent's kitchen to make (AND EAT) a simply decadent chocolate cake. What else is a best friend for if not sharing a cake together? Until I Find the One Who My Soul Loves...

One of dear childhood friends found her soul mate and will be married this January! First off how exciting is that?! Second, it was my absolute pleasure to design the logo for her wedding invitation! And for the engagement party I made them some matching cookies to go along with the invite (see below). Aside from the fact that I love designing invitations because it ties together one of the happiest days of their lives, I also love hearing input and what the big day means to them. Something that stuck with me since working with Elana was the quote she chose... It was nothing like the typical "I am my beloved" type quotes and I think that is what made it even more special and showed how much though went into choosing it. "Until I found the one who my soul Loves". I wish you both years and years of happiness together! I love you dearly! Mazal tov. xoxo

3 Plush ways with Red Velvet

Red velvet cake is one of those worlds mysteries of decadent cakes... so chocolaty yet bright red! So though I had an order for a dozen red velvet cupcakes but for some reason when I made this batch (vegan I might add) I had a ton of batter extra! And well knowing me, I just don't throw things out!
A whole ton of red is used I might add... you may want to buy an extra red food coloring if you want your to look this vibrant! That color doesn't make it's way onto the plate naturally I can tell you that!
So we experimented and make some Bakerella inspired red velvet truffles by using our own cake recipe, white chocolate chocolate for the coating, red sanding sugar for decoration and instead of cream cheese frosting I just used straight up cream cheese. I have always used just cream cheese for all of my truffles because I think theres enough sweetness in the cake itself that the extra salt and tang makes it super delicious! If you really want to take it one step further even, try sprinkling some fleur de sel or sea salt on them as they are drying- its sure to satisfy the food craving of any salty sweet lover!. I contemplated making a red drizzle for over them but I went the sugar route this time :D
And last but VERY not least... we also made a few extra cupcakes and decided it would be such a fun idea to serve in a beautiful wine glass layered with dollops of cream cheese frosting for a small sit down dinner party! Super easy and so classy and elegant looking! Happy baking! I will come back and post the vegan version of these delicious recipes!
