I've got to say, I'm not the biggest fan of chocolate cake... not sure why but I really never have liked it- I've always been a vanilla girl myself. But I will say that of all the chocolate cakes in the world this one, well... TAKES THE CAKE! Its healthy, delicious and so easy to make! I made this one for my moms birthday last week and was a great success! hope you enjoy.
Healthy Whole Wheat Dark Chocolate Cake
10 to 12 servings
2 cups sugar
13/4 cup whole wheat flour
3/4 cup cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup soy milk + 1 tbs apple cider vinegar to make sour milk
1 cup strong black coffee
1/2 cup applesauce
1 teaspoon vanilla extract
Heat oven to 350°F. Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan.
Mix together the soy milk and vinegar and set aside. Stir together sugar, flour, cocoa, baking soda, baking powder and salt in large bowl. Add eggs, milk mixture, coffee, applesauce and vanilla; beat on medium speed of mixer 2 minutes (batter will be thin). Pour batter evenly into prepared pans.
Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
1 cup soymilk
1 bag of semi-sweet or bittersweet chocolate chips
1 stick unsalted butter, room temp
In a small saucepan, bring the heavy cream and butter to a boil and immediately remove from the heat. Pour over the chopped chocolate. Let rest for about a minute. Using a rubber spatula, stir gently in a circular motion from the center and work your way outwards as an emulsion is formed. Use immediately for best results. Pour over cake layers. Let set and enjoy!
