Mini Donut Recipe

So I made these the other day for an event we did... and then again about 2 hours later for me to eat because there were that AMAZING and crazy easy to make!! -Best of all they are baked not FRIED! and you can easily make them gluten free (see below)!! I did a trio of flavors for fun... Straight up cinnamon and sugar, honey glazed and iced coconut. Below is the recipe and here is a link to buy the pan. AMAZING Mini Donuts
Servings: 48

Ingredients/
2 cups whole wheat flour (or 2 1/4 cups bobs mill gluten free flour mix)
3/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon salt
3/4 cup vanilla soy milk
2 eggs, beaten
1 teaspoon vanilla extract
1 tablespoon earth balance

Directions/
Preheat oven to 325 degrees F. Lightly grease a doughnut pan. In a large bowl, mix flour, sugar, baking powder, nutmeg, cinnamon and salt. Stir in milk, eggs, vanilla and earth balance. Beat together until well blended. Scoop some of the batter into a piping bag or ziplock and cut 1/4 inch hole. Pipe each doughnut cavity approximately 3/4 full. Bake 4-5 minutes in the preheated oven, until doughnuts spring back when touched. Allow to cool slightly before removing from pan. Be creative with your toppings! NOTE: you can just as easily use a mini muffin pan but the mini pan is just too cute to pass up!
