These are an adaptation of Martha Stewart's Banana Cream Whoopie Pies, and can I say WOW! and extremely easy to make these dairy free! -All you have to do is replace the butter with earth balance and toffuti sour cream for the regular sour cream. The one definite change I will say that we made was adding an extra 1/4 cup of sour cream- it made the batter a bit moister and easier to pipe onto the cookie sheet. This particular time we made them was actually an order for an event at Martha Stewart tomorrow. I will post more on the event after... and of course there will be photos! Stay tuned! Oh yeah... Quick tip about whoopie pies... if you want them to come out perfectly round, just made normal mounds and when you first pull them out of the oven use a cookie cutter to make them uniform... also a fun way to play with whoopie shapes!!
