Dairy Free Madeleines

I guess it is because the similarity of names but every time I make or think of these cookies/cakes, I think of the cartoon of the little french girl... Regardless these are delicious! I used the technique of a recipe from Epicurious but revamped the whole thing so us lacto-folks can indulge as well! The key here really is the brown butter! I have made Martha's Chocolate Browned Butter Madeleines as well and WOWZA!! If you aren't allergic to anything you should stop what you're doing right now and make those! Or you can just order them from SHORTBREAD NYC!

Dairy Free Madeleines
Makes 20

Ingredients/
2 large eggs
2/3 cup sugar (or cane juice crystals)
1 teaspoon vanilla
1 teaspoon lemon zest
1/2 teaspoon salt
1 cup all purpose flour (I used whole wheat- I'm healthy like that :D)
1 1/4 sticks Earth Balance (10 tablespoons)

Directions/
Heat Earth Balance in a small sauce pan over medium-high heat until it begins to brown. Swirl the pan every so often so as not to burn the butter. One golden brown, pour into a small bowl and set aside.
Preheat the oven to 375˚F. Generously coat the pan in remaining Earth Balance or load up on the pam spray. 
Using an electric mixer, beat eggs and sugar in large bowl just to blend. Beat in vanilla, zest and salt. Add flour and beat until just blended. Gradually add the cooled "browned butter" beating until just blended.
Spoon 1 tablespoon of the batter into each mold. Bake until puffed up and golden brown (about 1-15 minutes). Cool in the pan for about 5 minutes then gently remove. Serve and enjoy. 

NOTE/ They only last for a few day before they get harder but I'm sure than wont be a problem... they disappear pretty fast!

  3. One of my favorite desserts since I was a boy is a fall Pear and Sour Cherry Brown Betty with Venezuelan chocolate. It is mind-blowing! How can I make that bad boy healthy.

  9. My favorite dessert is che chuoi -- a Vietnamese banana, tapioca, and coconut milk pudding. It can be served warm or cold, which makes it perfect for both the winter and the spring! It's sweet and delicious!

  10. I used to not like madeleines for some reason... whenever my parents would buy a box from costco, i'd adamantly stay away.
    until that one time i tried one that a friend's mom had made, and they were delicious. i asked her for them all the time, and so for christmas, i got a big bag of homemade madeleines. it was pretty much amazing =]

  12. I'm definitely going to have to try your recipe--madeleines are one of my personal favorites! Other than that, I LOVE a rich dark chocolate mousse. Give me a bowl of that and a spoon and I'm a happy girl.

  13. My favorite dessert would probably have to be Oreo ice cream pie. Not only is it easy to make, it's always nice to take out my frustation by pounding the heck out of those Oreo cookies.

  16. passion fruit mousse, without a doubt...the texture and smooth mouth feel of a perfectly prepared mousse and the tangy-ness of the passion fruit makes it to my top fave desserts.

  23. These look delicious! I totally want to try making it! Though, as a college freshman my budget doesn't really allow me to indulge in my interest and buy pans for baking. It would be really nice if I can receive the pan...

    I don't really have a favorite favorite dessert as of far, but being a picky child I don't enjoy overly sweetened desserts. So for right now, I'm going to say that lemon bars are my favorite, because there's a bit of sourness from the lemons to balance out the sweet.

  24. My favorite dessert, by far, (although I really hate to choose) is my mother's rum cake, with rum/sugar glaze. Perfect for parties, and the longer it sits with the glaze, the rummier and sweeter it tastes!

    I do love madeleines, though, and sure would like a pan... ;)

  25. Oh man, favorite dessert, there's no way I can pick just one...i definitely enjoyed this one, made by one of my friends =]

    dark chocolate molten lava cake with berries sitting in some sugar and amaretto liquor.

    but i would love to use this recipe maybe for muffins for my roommate who's allergic to dairy and gluten (yeah it sucks...) so maybe use some almond flour...

    anyway those madelines looks REALLY AMAZING!

    also anything dark chocolate or amaretto related and I also really love pandan waffles (the mix of the pandan aroma and distinct coconut flavor is unforgettable)!

  46. My favorite dessert is a little known pastry from Bordeaux,FR called a Cannelé. Upon arriving at the train station the sights of canneles are impossible to miss. These "cakes" are unlike any you've ever tasted, moist almost creamy on the inside and a chewy caramel colored coating on the outside. Because the individual molds are made out of copper, not only are they expensive ($20ea!)but almost impossible to find. So if you ever visit France pick a bunch like I did.

  47. Im amazed at how many people love tiramisu!! I guess that is the next dessert/post I will be making dairy free!!

    Oh and "moo" I have made a vegan creme brulee and I have to say for a VEGAN dessert it was pretty fantastic!!

  55. I love madelines! They are definitely my favorite dessert. Two summers ago, I travelled to France for 23 days on a study abroad trip with my college. Every day we had a packed lunch, and in each lunch we had 3 madelines wrapped in cellophane. Every time I see a picture of one or hear someone talk about madelines, I remember that trip and how it felt to be so far away from home but so happy. And honestly, I remember the madelines. Even though I think they were store-bought, they tasted like my mom had made them :) Since I've been home I've tried to find madelines and haven't been able to find any fresh baked ones. I love that you put the recipe online... now I can make them myself!

  57. My vote is for my German 'Butterkeks' recipe. The cookie is rolled and cut like a sugar cookie dough but not nearly as sweet. Instead of icing it receives a glaze made out of cream and eggyolk and to decorate a sliver of almond. This simple cookie is ever so simple yet satisfying. My recipe has been in our family for at least 4 generations now and I look forward to passing it along to my daughter. Thanks for the giveaway offer.

  61. Where in the world did you find mini madelaine pans? My favorite dessert is an azuki cream puff that's from a bakery about half an hour away from my home.

    Sweet croissant shell filled with a bottom layer of sweet azuki paste, then filled to the brim with a sweetened whipped cream. To finish it off, they then douse it with a shower of powdered sugar!

  63. Oh my goodness; I love Madeleines. My favorite are the Chestnut Honey ones from Bellota-Bellota in Paris...they are actually financiers (a little denser) in the shape of Madeleines. Ever since I had them, I've wanted to make them...but I don't have a pan!!!
