Dairy Free Madeleines
Makes 20
Ingredients/
2 large eggs
2/3 cup sugar (or cane juice crystals)
1 teaspoon vanilla
1 teaspoon lemon zest
1/2 teaspoon salt
1 cup all purpose flour (I used whole wheat- I'm healthy like that :D)
1 1/4 sticks Earth Balance (10 tablespoons)
Directions/
Heat Earth Balance in a small sauce pan over medium-high heat until it begins to brown. Swirl the pan every so often so as not to burn the butter. One golden brown, pour into a small bowl and set aside.
Preheat the oven to 375˚F. Generously coat the pan in remaining Earth Balance or load up on the pam spray.
Using an electric mixer, beat eggs and sugar in large bowl just to blend. Beat in vanilla, zest and salt. Add flour and beat until just blended. Gradually add the cooled "browned butter" beating until just blended.
Spoon 1 tablespoon of the batter into each mold. Bake until puffed up and golden brown (about 1-15 minutes). Cool in the pan for about 5 minutes then gently remove. Serve and enjoy.
WOw theses sound really good. I made a coffee cake from scratch and it was so easy and good.... I love coffee cake...
ReplyDeleteYa know why coffee cake is so amazing... Because the word coffee is in it, that means you can have it for breakfast!
ReplyDeleteOne of my favorite desserts since I was a boy is a fall Pear and Sour Cherry Brown Betty with Venezuelan chocolate. It is mind-blowing! How can I make that bad boy healthy.
ReplyDeleteAnswer THAT!
:)
these madeleines are adorable! my favorite dessert is creme brulee. i wonder what a dairy free or vegan one would taste like?
ReplyDeleteMy favorite is lemon tart with some fresh berries on top!!
ReplyDeletedo you think gluten free all purpose flour would be okay with this? :]
ReplyDeleteThey're fantastic looking! I'll have to try them sometime <3
ReplyDeleteMy favorite dessert would probably be tiramisu <3
My favorite desserts are flan, red velvet cake, and ice cream
ReplyDeleteMy favorite dessert is che chuoi -- a Vietnamese banana, tapioca, and coconut milk pudding. It can be served warm or cold, which makes it perfect for both the winter and the spring! It's sweet and delicious!
ReplyDeleteI used to not like madeleines for some reason... whenever my parents would buy a box from costco, i'd adamantly stay away.
ReplyDeleteuntil that one time i tried one that a friend's mom had made, and they were delicious. i asked her for them all the time, and so for christmas, i got a big bag of homemade madeleines. it was pretty much amazing =]
I always wanted to try making madeleines. My favorite dessert is key lime pie!
ReplyDeleteI'm definitely going to have to try your recipe--madeleines are one of my personal favorites! Other than that, I LOVE a rich dark chocolate mousse. Give me a bowl of that and a spoon and I'm a happy girl.
ReplyDeleteMy favorite dessert would probably have to be Oreo ice cream pie. Not only is it easy to make, it's always nice to take out my frustation by pounding the heck out of those Oreo cookies.
ReplyDeleteYay, free madeleine pan! I've never tried these, but I sure would love to :) I actually JUST posted my favorite dessert ever on my blog: Banana Coconut Cream Mini-Cakes!

Oh, I would love a Madeleine pan!! My favorite dessert is the one I just made: Chocolate Overload Cake. YUM!
ReplyDeletetiramisu is my favorite!
ReplyDeleteThese look delicious! I totally want to try making it! Though, as a college freshman my budget doesn't really allow me to indulge in my interest and buy pans for baking. It would be really nice if I can receive the pan...
ReplyDeleteI don't really have a favorite favorite dessert as of far, but being a picky child I don't enjoy overly sweetened desserts. So for right now, I'm going to say that lemon bars are my favorite, because there's a bit of sourness from the lemons to balance out the sweet.

My favorite dessert, by far, (although I really hate to choose) is my mother's rum cake, with rum/sugar glaze. Perfect for parties, and the longer it sits with the glaze, the rummier and sweeter it tastes!
ReplyDeleteI do love madeleines, though, and sure would like a pan... ;)
Oh man, favorite dessert, there's no way I can pick just one...i definitely enjoyed this one, made by one of my friends =]
ReplyDeletedark chocolate molten lava cake with berries sitting in some sugar and amaretto liquor.
but i would love to use this recipe maybe for muffins for my roommate who's allergic to dairy and gluten (yeah it sucks...) so maybe use some almond flour...
anyway those madelines looks REALLY AMAZING!

Favorite dessert? These madeleines will be as soon as i veganize them!
ReplyDeleteMy favourite dessert is this amazing white chocolate & raspberry cheesecake I sometimes make (sadly only on very! special occassions... or else my figure wouldn't forgive me). But to be honest, any kind of baking is good by me!
ReplyDeleteI love, love, love, love cheesecake. The original kind is my favorite, but any will do. :)
ReplyDeleteMy favorite dessert is cheesecake! your madeleines look great!
ReplyDeleteBrownies are my fave. I make some that have almost 1.5lb of chocolate in them. To. Die. For.
ReplyDeleteCute madeleines, btw!!
YUM. I love madeleines, but the one that tops it all is tiramisu. coffee and cream? yes please.
ReplyDeleteSomething I need to try... if I had a Madeleine pan... hint hint.

julesieumd (at)yahoo (dot)com
My all-time favorite dessert is probably carrot cake.
ReplyDeletethese look delicious!
ReplyDeletefavorite dessert. that's a stumper. tiramisu? i don't know!!! too many to choose from.
ReplyDeletecheers,
*heather*
I like dessert, period. Pie rocks, and so does cake.
ReplyDeleteMy favorite dessert is a little known pastry from Bordeaux,FR called a Cannelé. Upon arriving at the train station the sights of canneles are impossible to miss. These "cakes" are unlike any you've ever tasted, moist almost creamy on the inside and a chewy caramel colored coating on the outside. Because the individual molds are made out of copper, not only are they expensive ($20ea!)but almost impossible to find. So if you ever visit France pick a bunch like I did.
ReplyDeleteIm amazed at how many people love tiramisu!! I guess that is the next dessert/post I will be making dairy free!!
ReplyDeleteOh and "moo" I have made a vegan creme brulee and I have to say for a VEGAN dessert it was pretty fantastic!!
This delectable rhubarb crumb cake is making my heart siiiing lately!

My absolute favorite is a thick chewy brownie with ice cream and fudge sauce. My husband and I enjoy this once in a while as a special date!
ReplyDeleteThanks,

I'd have to go with a chewy chocolate chip cookie.
ReplyDeleteGreat giveaway; thanks for the chance!
Definitely have to go with a key lime pie!
ReplyDeleteWOW LOVE THE PAN...my fav dessert is Tiramisu
ReplyDeleteI would have to say freshly baked chocolate chip cookies without the chocolate chips...It's better than you think.
ReplyDeleteMadeleines are great; mini madeleines are even better! As much as I love them, carrot cake is still my favorite dessert. Easy on the frosting, though. =)

I love madelines! They are definitely my favorite dessert. Two summers ago, I travelled to France for 23 days on a study abroad trip with my college. Every day we had a packed lunch, and in each lunch we had 3 madelines wrapped in cellophane. Every time I see a picture of one or hear someone talk about madelines, I remember that trip and how it felt to be so far away from home but so happy. And honestly, I remember the madelines. Even though I think they were store-bought, they tasted like my mom had made them :) Since I've been home I've tried to find madelines and haven't been able to find any fresh baked ones. I love that you put the recipe online... now I can make them myself!
ReplyDeleteThanks for your post... It made my day :)
My favorite dessert is ice cream :)
ReplyDeleteMy vote is for my German 'Butterkeks' recipe. The cookie is rolled and cut like a sugar cookie dough but not nearly as sweet. Instead of icing it receives a glaze made out of cream and eggyolk and to decorate a sliver of almond. This simple cookie is ever so simple yet satisfying. My recipe has been in our family for at least 4 generations now and I look forward to passing it along to my daughter. Thanks for the giveaway offer.
ReplyDeleteMy absolute favorite dessert is bananas foster. It's a great combination of flavors, and you get a show!
ReplyDeleteThese look totally beautiful. I have always wanted to try making Madeleines. Anyway, my favorite dessert is definitely jelly beans, because apparently I am six years old.
ReplyDeleteWhat a great idea for a giveaway. My favorite dessert is probably ice cream, but I love just about any cake and cookie and brownies, so I don't discriminate... ;)
ReplyDeleteWhere in the world did you find mini madelaine pans? My favorite dessert is an azuki cream puff that's from a bakery about half an hour away from my home.
ReplyDeleteSweet croissant shell filled with a bottom layer of sweet azuki paste, then filled to the brim with a sweetened whipped cream. To finish it off, they then douse it with a shower of powdered sugar!
I've always wanted to try and make madelaines!!!
ReplyDeleteMy favorite dessert is Boston Cream Pie.
Oh my goodness; I love Madeleines. My favorite are the Chestnut Honey ones from Bellota-Bellota in Paris...they are actually financiers (a little denser) in the shape of Madeleines. Ever since I had them, I've wanted to make them...but I don't have a pan!!!
ReplyDeleteCreme brulee ... but I don't sneer at Madeleines!
ReplyDeleteJust about anything I can use as a vehicle for my nutella consumption. (Madeleines are great for that too.)
ReplyDeletemmmmm~ I can smell it from here!
ReplyDeletei love bananas foster!!!
ReplyDeleteI could eat Key Lime Pie everyday!
ReplyDeleteCannoli! But I'm willing to give madeleines a shot :)
ReplyDeleteLove strawberry shortcake!
ReplyDeleteMy favourite dessert would have to be lemon meringue pie, its a family specialty that always makes me think of spring :D
