Peanut Butter Kiss Cookies



It's Peanut Butter Jelly Time! The classic and a twist on the favorite.
I think the only thing missing from this glorious cookie is a banana... maybe ill try to incorporate that next time :D


Peanut Butter Kiss Cookies

Ingredients:
1 cup earth balance butter, softened
1 cup peanut butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1/4 cup soy milk
2 teaspoons vanilla extract
3 1/2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1/3 cup white sugar for rolling
1 bag dark chocolate kisses, unwrapped
Strawberry Jam

Directions:
Preheat oven to 350 and spray cookie sheets with pam cooking spray.

In a large bowl, cream together the butter, peanut butter, brown sugar, and 1 cup white sugar until smooth. Beat in the eggs one at a time, and stir in the soy milk and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture until well blended. Shape tablespoon size balls of dough and roll in remaining white sugar. Place cookies 2 inches apart on the prepared cookie sheets.

Bake for 10-12 minutes. Remove from oven, and immediately press a chocolate kiss into each cookie. Allow to cool completely; the kiss will harden as it cools. I like to mush the chocolate around and down until it completely melts into the dent.

VARIATION: make a dent in the cookie when it comes out of the oven and fill with a teaspoon of jam... the continue with pressing a kiss down into each cookie.
