Not sure if its just me, but I remember girl scout cookie time as the highlight of my year. I used to be able to polish off Samoas or Thin mints by the box full! I used to keep them in the freezer and get up every so often to get one... or 7. So to honor that tradition I thought i'd to healthy them up a bit (emphasis on the "bit") Try them out and tell me what you think! Happy Baking!
Samoa Brownie Bites
1/2 cup canola oil
3/4 cup fava bean flour
1/4 cup potato starch
1/2 cup plus 3 tablespoons agave nectar
3 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup unsweetened cocoa powder
1/2 cup applesauce
2 tablespoons pure vanilla extract
1/2 cup brewed coffee
1. Preheat oven to 350 degrees. Spray mini-muffin pans with pam.
2. In a medium bowl, whisk together flour, potato starch, baking powder, baking soda, salt, and unsweetened cocoa powder; set aside. In a large bowl, mix together applesauce, agave, 1/2 cup canola oil, and vanilla. Slowly add flour mixture, stirring to combine. Stir in coffee until it forms a batter.
3. Spoon 1 tablespoon batter into each prepared muffin cup. Bake for about 10-15 minutes until the sides spring back. Let cool completely.
Brownie Recipe (2 choices Below) (or 1 box brownie mix - if you're super lazy :D)
4 cups toasted coconut (recipe below)
1 quart container full of packaged caramels (about 3 cups)
1 tsp salt
1/4 tablespoons milk
1 chocolate bar
1. Make brownies according to directions below of if you are using a mix make the brownies according to the box and cool.
2. While the brownies are cooling, place caramels salt and milk in a microwave safe bowl and cook on high for 3-5 minutes. Stop every minute to stir. Cook until melted an smooth. Add the toasted coconut to the heated caramel mixture and mix together. Spread evenly over cooled brownies. Let the caramel/coconut firm up a bit. Melt chocolate and put in a squeeze bottle for easy drizzling and go to town. Temper 1 hour before serving.
3. Keep away from you your boyfriend if you ever want to have any :D

5oz unsweetened chocolate, chopped
1/2 cup (1 stick) unsalted butter (I used earth balance to make them dairy free)
2 cups sugar
2 teaspoons vanilla extract
4 eggs
1/2 teaspoon salt
1 cup whole wheat flour
1. Preheat oven to 350 degrees. Spray mini-muffin pans with pam.

5oz unsweetened chocolate, chopped
1/2 cup (1 stick) unsalted butter (I used earth balance to make them dairy free)
2 cups sugar
2 teaspoons vanilla extract
4 eggs
1/2 teaspoon salt
1 cup whole wheat flour
1. Preheat oven to 350 degrees. Spray mini-muffin pans with pam.
2. Stir chocolate and butter in heavy large saucepan over low heat until melted and smooth. Let Cool.
3. Whisk sugar and vanilla into the cooled chocolate mixture, then whisk in eggs and salt; add in flour. Be careful not to mix the batter too much so they do not become gummy.
3. Spoon 1 tablespoon batter into each prepared muffin cup. Bake for about 10-15 minutes until the sides spring back. Let cool completely.

Vegan & Gluten Free Brownie Recipe

Toasted Coconut
Toast coconut on a cookie sheet in a 400 degree oven for 8 minutes. Stir around every minute or so to keep from burning. Take out and cool when coconut turns a golden brown
