SUPER MOIST AND HEALTHY DATE CAKE
Ingredients
1 1/2 cups of chopped dates to which
1 cup boiling water
1 cup of brown sugar
1 1/3 cups of whole wheat flour
2 egg whites
1/4 cup of soy milk
1 tablespoon applesauce
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup pecans, chopped (optional)
1/4 cup chocolate chips (optional)
Directions
Preheat the oven to 350F
Pour cup of boiling water over dates and set aside for later use.
Cream together the sugar and applesauce. Add in the flour, baking powder, and baking soda. Add the dates with water, egg whites, and soy milk. Mix well. Stir in the pecans and chocolate chips (optional).
Spray a loaf pan with PAM. Pour the batter into the pan. Bake for 45-50 minutes. Remove from pan and cool.
