Honey Oatmeal-Golden Raisin Cookies
Makes 1 dozen cookies
Ingredients:
1 1/4 cups whole-wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground cardamom
1 cup quick oats
2 tablespoons Earth Balance Butter, softened
1/3 cup firmly packed brown sugar
2 tablespoons honey
2 large egg whites
1 teaspoon vanilla extract
1/2 cup golden raisins, soaked in hot water
1/4 cup finely chopped almonds, toasted
Directions:
Preheat oven to 350 degrees F. Grease cookie sheets with cooking spray.
In a mixing bowl, sift together flour, baking soda, salt and cardamom; stir in oats until combined.
In a large mixing bowl, using a mixer on medium speed, beat together butter, brown sugar and honey until creamy, about 1 minute. Beat in egg whites and vanilla until combined. Reduce mixer speed to low and beat in flour mixture until just combined; stir in raisins and almonds by hand.
Drop 1 table spoon of dough onto cookie sheets. Flatten slightly with the bottom of a glass. Bake for 10-11 minutes or until golden brown. Cool for 1 minute before transferring to wire racks to cool completely.
