Recipe/ Vegan & Gluten Free Broccoli Soup
Dietary Consideration/ Gluten Free, Vegan, Dairy Free, Low Fat, Low Calorie, Nut Free (and tasty!)
So last week I hosted a Cinco De Mayo party and not sure how, but i ended up with a few bags of broccoli floating around my fridge... after days of pondering what to do with a less than desired vegetable... my brilliant design assistant decided upon a soup that his mother makes often. Being that I am allergic to dairy, "cream of broccoli soup" is never on my menu... So thank you Nancy for the amazing recipe! (and joey for assisting me on it!) See recipe below.
Aside from my design assistant, my best friends little sister Arielle spent the day as my sidekick... after a few hours of baking and brainstorming ideas for new Shortbread events, she commented how she would love to learn how to take great food photography to better her own food blog. SO WE DID- and we had our delicious Broccoli soup as a fantastic subject... especially since soup is THE hardest thing to photograph! See below for the FANTASTIC results for a newbie!
Vegan Broccoli Soup
2 heads broccoli
1 head cauliflower
1 serrano chili pepper
4 cloves garlic
1 cup oats or barley... or any grain you like as a thickener
2 lemons, juiced
Salt and pepper to taste
Put first 5 ingredients into a food processor until fine then pour into a large soup pot. Cover with water until liquidy (sorry no measurement) Bring to a boil for about 20 minutes then pour into a blender to puree. (I did it in batches) Then pour the pureed soup back into the pot. Bring back to a boil and slowly add oats. Allow oats to cook (5 minutes) then add lemon juice and season to taste. ENJOY!
