Gluten Free Pumpkin Cake - for 2!

The perfect recipe for you and your sweetie when it's just the two of you and that sweet tooth just wont go away!

Gluten Free Eazy Peazy Pumpkin Cake for 2! no oven required
Ingredients
1 tablespoon sorghum flour (or simply replace both flours for whole wheat flour)
1 tablespoon millet flour
2 tablespoons sugar
1/4 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice
1/4 teaspoon salt
2 tablespoons pumpkin puree (I made fresh but you can use canned, and if you can't find pumkin you can always opt for squash- works the same :D)
1 egg white
1 tablespoon oil
1/4 teaspoon vanilla

Directions
Spray 2 large mugs with PAM baking spray. Combine all dry ingredients, then add all the wet. Divide evenly among both mugs. Microwave 1 at a time for 3 minutes on high. Let cool for a couple of minutes without looking. Remove and let cool... Top with whipped cream, chopped nuts or even some simple confectioners' sugar! THEN ENJOY! thanks celiacteen
