Healthy Whole Wheat Chocolate Chip Pumpkin Muffins

These muffins contain no dairy, refined sugars or wheat's. and best of all they're still moist and delicious. You can use the same recipe to make a loaf just up the baking time to about 45 minutes. (photo coming soon!)
Makes 1 Dozen Muffins


INGREDIENTS
1 1/2 cups whole wheat flour
1/2 cup packed brown sugar
1 teaspoon pumpkin pie spice
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 egg whites
3/4 cup canned pumpkin puree
1/2 cup apple sauce
1/2 cup honey
1/2 cup chocolate chips (optional)

DIRECTIONS
Preheat the oven to 350 F. Spray a muffin pan with pam, or line with muffin cups.

In a large bowl, stir together the whole wheat flour, brown sugar, pumpkin pie spice, baking powder, baking soda and salt. Then add in the egg whites, pumpkin puree, apple sauce and honey. Mix just until the dry ingredients are absorbed. Stir in chocolate chips. Spoon into muffin cups so they are about 2/3 full.
Bake for 18 minutes in the preheated oven, or until done. Let cool and enjoy!
