Brulee Mini Cheesecakes
I have had a family cheesecake recipe for years and decided to play with it this past week. We ended up making mini cheesecakes in mini spring form pans. Once they were finished and cool we sprinkled sugar on top to brulee them with a blow torch. They gave it a nice rustic look... and most of all---it gave it a crystallized crunch to every bite! Try it next time you make a cheesecake. To make cheesecake dairy free just substitute the cream cheese for toffuti cream cheese! :D Happy Baking!
