Dairy Free Cran-Orange Oat Muffins

Dairy Free Cran-Orange Oat Muffins

Makes 12 muffins
1½ cups whole wheat flour
¾ cup oats
2 teaspoons baking powder
1 tablespoon orange zest
½ teaspoon salt
1 cup fresh chopped cranberries
½ cup chopped pecans
3 egg whites
⅔ cup sugar
¾ cup soy milk
⅓ cup melted earth balance

Preheat oven to 350F. Spray muffin tin with PAM.

Combine flour, oats, baking powder, and orange zest in a large mixing bowl. In a separate mixing bowl, whisk egg whites until broken up. Add sugar and whisk until combined. Whisk in earth balance and milk. Add cranberries and nuts to the dry ingredients and stir to combine. Add milk mixture and fold until combined and not overmixed.

Divide batter among 12 muffin cups. BBake about 18-20 minutes. Cool
